Ah, this is a classic that reminds me of so many happy moments! Like the best breakfast I ever had or a trip to Canada where I enjoyed poached eggs with the finest Canadian Bacon every day. These poached eggs turn out fantastic – the whites are nice and firm, and the yolks are all creamy and ready to slide around the plate.

Now, here’s a little secret to making them perfect: just add a couple of tablespoons of white vinegar to the water before you create that swirling vortex and start poaching the eggs. Oh, and make sure to use super fresh eggs at room temperature. That’s the key to egg-cellent poaching!
